Mint Chocolate Chip Donut

Now, you can’t just go offer another cupcake, even though they are delicious, you need something that stands out in your bakery display case. How about a mint chocolate chip baked donut? That is right, who says you cannot offer donuts in your bakery if you do not have a fryer?

Ingredients

  • PMF White Cake Mix
  • PMF Chocolate Dipping Icing
  • Vegetable Oil
  • Peppermint Emulsion
  • Green Food Coloring
  • PMF Chocolate Chips

Directions

  • SCALE & MIX: Scale and mix the donut mix according to the instructions on the bag for a small batch. Use your scale to weigh all the ingredients, including the water.
  • Makeup: Add 1 to 1.5 ounces of peppermint emulsion flavor and 30 drops of green food coloring or until the desired color is achieved into your cake batter mix. When batter is colored and flavored, add 4 ounces of PMF chocolate chips. Using a 3¼ inch cake donut mold, add 1.5 ounces of cake batter per cavity until all 6 are filled.
  • BAKE:
    • Bake at 320°F in a rack oven for 15 minutes.
    • When using a reel oven or conventional oven, bake at 340°F.
  • FINISH:
    • Pour 1 lb of chocolate dipping icing into a container, and warm it up in the microwave to 110°F.
    • Once dipping icing is warmed, start dipping cake donuts and sprinkle green or chocolate sprinkles.
